cherry carob pupcakes

i made a cherry pie this weekend for the humans and had plenty of cherries left over for the pups. rocket thought the treat was the cherry on top. so, while rocket was working on the cherry, yuki threw her cherry on the ground, quickly ate her pupcake, then moved on to eating rockets pupcake. times sure have changed since we first brought rocket home. you'd never think he ever had possessive issues with food.

 

cherry carob pupcakes

ingredients:

2 cups whole wheat pastry flour
1/2 cup oats
1 tbsp ground flax
1 tsp baking powder
1/2 cup sweet cherries, chopped all pits and stems removed
1 large egg
1 tsp pure vanilla extract
1 cup water
1 tsp vegetable oil

directions:

heat oven 350 f.

lightly grease a muffin pan.

1. mix whole wheat pastry flour, oats, flax, and baking powder.

2. gently fold in chopped cherries.

3. stir in egg.

4. mix vanilla extract with 1 cup water. mix into batter.

5. stir in vegetable oil.

pour batter into a lightly greased muffin pan. you can fill the muffin cups almost to the top, because they will just slightly rise.

note: you may use paper muffin cups, but be aware that some may stick to the bottom of the pupcake, so you'll have to peel off some paper. maybe my oven was just acting a bit wonky the day i made these, because not all of them did this.

bake for 12 minutes or until the center is cooked. let cool and frost with melted carob chips.
